En 2020, ils r\u00e9novent le b\u00e2timent et y inscrivent leur propre histoire, fid\u00e8le au terroir dr\u00f4mois. Depuis 2013, l\u2019\u00e9toile Michelin distingue la cuisine du <a href=\"https:\/\/lamaisonbonnet.fr\/fr\/restaurant-gastronomique-le-kleber.html\" target=\"_blank\" rel=\"noopener\">Kl\u00e9ber<\/a>, une cuisine de saison, pr\u00e9cise et sinc\u00e8re, o\u00f9 Julie veille \u00e0 offrir un accueil chaleureux, \u00e0 l\u2019image de cette maison habit\u00e9e par le temps et le go\u00fbt.<\/span><\/p>\n<blockquote><p><b><i>\u00ab Ma cuisine, c\u2019est celle du c\u0153ur : simple, sinc\u00e8re, fid\u00e8le au produit et \u00e0 mes racines. \u00bb<\/i><\/b><\/p><\/blockquote>\n<h3><b>Regard sur le chef<\/b><\/h3>\n<p><span style=\"font-weight: 400\">Originaire de P\u00e9rigueux, S\u00e9bastien Bonnet d\u00e9couvre tr\u00e8s t\u00f4t que la cuisine sera le fil conducteur de sa vie. Apr\u00e8s le coll\u00e8ge, il s\u2019oriente vers un bac professionnel cuisine, pr\u00e9par\u00e9 en alternance \u00e0 Ferrandi Paris, o\u00f9 il acquiert les bases solides du m\u00e9tier. Ses premi\u00e8res exp\u00e9riences professionnelles se font aupr\u00e8s de St\u00e9phane Gaborieau, Meilleur Ouvrier de France, et de Jacky Ribault. Ces ann\u00e9es formatrices lui enseignent \u00e0 la fois la rigueur technique et l\u2019importance d\u2019une cuisine conviviale, ouverte sur les autres.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Son parcours se poursuit dans de grandes maisons fran\u00e7aises, o\u00f9 il affine son approche et sa sensibilit\u00e9. Chaque exp\u00e9rience marque son identit\u00e9 : la pr\u00e9cision du geste, la recherche du sens dans chaque assiette et l\u2019humilit\u00e9 n\u00e9cessaire pour sublimer le produit. Apr\u00e8s ces ann\u00e9es d\u2019apprentissage et d\u2019aventures, l\u2019appel de ses racines devient incontournable. De retour en Dordogne, il rencontre de nombreux producteurs et artisans passionn\u00e9s, qui l\u2019inspirent \u00e0 penser sa cuisine autrement : un lien direct avec le terroir, la saisonnalit\u00e9 et la sinc\u00e9rit\u00e9 des produits.<\/span><\/p>\n<h3><b>Du bistrot au gastro<\/b><\/h3>\n<p><span style=\"font-weight: 400\">\u00c0 ses d\u00e9buts, S\u00e9bastien et sa femme reprennent une pizzeria, faute de moyens pour s\u2019offrir un restaurant gastronomique. Cette aventure durera six ann\u00e9es. Mais l\u2019envie de revenir \u00e0 la cuisine apprise dans les grandes maisons finit par s\u2019imposer. En 2007, ils reprennent le Kl\u00e9ber, \u00e0 Crest, et amorcent le virage vers la gastronomie.<\/span><\/p>\n<p><span style=\"font-weight: 400\">En 2019, ils franchissent une nouvelle \u00e9tape en rachetant une demeure \u00e0 Grenoble, o\u00f9 ils r\u00e9unissent sous le nom de Maison Bonnet deux univers compl\u00e9mentaires : un restaurant gastronomique, Le Kl\u00e9ber, et un bistrot, Lenka, distingu\u00e9 d\u2019un Bib Gourmand.<\/span><\/p>\n<h3><b>L\u2019\u00e9toile comme distinction<\/b><\/h3>\n<p><span style=\"font-weight: 400\">Le Kl\u00e9ber d\u00e9croche sa premi\u00e8re \u00e9toile en 2013 \u00e0 Crest. Lors du d\u00e9m\u00e9nagement, le guide suspend la distinction, qu\u2019il faut regagner. En 2022, quelques mois seulement apr\u00e8s l\u2019ouverture \u00e0 Grenoble, l\u2019\u00e9toile revient. Un soulagement et une reconnaissance du travail accompli. \u00c0 cela s\u2019ajoute le maintien du Bib Gourmand pour Lenka.<\/span><\/p>\n<h3><b>Une aventure familiale et une \u00e9quipe soud\u00e9e\u00a0<\/b><\/h3>\n<p><span style=\"font-weight: 400\">Le chef insiste sur l\u2019importance de son \u00e9quipe, compos\u00e9e d\u2019une dizaine de personnes. Julie, son \u00e9pouse, occupe une place centrale. \u00c0 leurs c\u00f4t\u00e9s, un noyau fid\u00e8le : Pirate, chef colombien au bistrot, Noa, chef p\u00e2tissier depuis six ans, ou encore \u00ab Fils \u00bb, pr\u00e9sent depuis dix ans, v\u00e9ritable couteau suisse de la maison. Des figures pr\u00e9cieuses qui assurent la stabilit\u00e9 et la cr\u00e9ativit\u00e9 de l\u2019ensemble.<\/span><\/p>\n<h3><b>La cuisine et l\u2019audace du chef\u00a0<\/b><\/h3>\n<p><span style=\"font-weight: 400\">S\u00e9bastien d\u00e9finit sa cuisine comme \u00ab une cuisine du c\u0153ur \u00bb. Sans fioritures, directe et sinc\u00e8re. Pas de techniques mol\u00e9culaires, mais un attachement aux produits et au go\u00fbt. Une approche h\u00e9rit\u00e9e de son parcours et de son ancrage rural, fils d\u2019agriculteur qui n\u2019a jamais perdu de vue la terre et ce qu\u2019elle offre.<\/span><\/p>\n<p><span style=\"font-weight: 400\">L\u2019audace, S\u00e9bastien l\u2019exprime dans ses essais culinaires. Parfois risqu\u00e9s, souvent inspir\u00e9s, ils se r\u00e9v\u00e8lent \u00eatre de belles d\u00e9couvertes. Comme ce siphon de caviar imagin\u00e9 lors d\u2019une journ\u00e9e avec Caviar de Neuvic, ou certaines associations surprenantes qui finissent par convaincre les convives.<\/span><\/p>\n<h3><b>Le pigeon, plat embl\u00e9matique<\/b><\/h3>\n<p><span style=\"font-weight: 400\">Parmi les plats signatures du chef, le pigeon occupe une place de choix. D\u00e9couvert lors de son brevet professionnel, ce mets est devenu une constante de sa carte, revisit\u00e9 au fil des saisons. En ce moment, il se d\u00e9cline avec une polenta au s\u00e9same, des tomates confites au cumin et un jus \u00e0 la prune<\/span><\/p>\n<h3><b>Une rencontre avec Caviar de Neuvic<\/b><\/h3>\n<p><span style=\"font-weight: 400\">La relation avec Caviar de Neuvic na\u00eet presque par hasard, avec le passage d\u2019une commerciale au restaurant. Au fil du temps, le lien se renforce, notamment gr\u00e2ce \u00e0 des rencontres, des visites de la ferme et des \u00e9changes r\u00e9guliers. S\u00e9bastien appr\u00e9cie particuli\u00e8rement le travail sur l\u2019esturgeon et les \u0153ufs de poisson, et n\u2019h\u00e9site pas \u00e0 tester et donner son avis sur de nouvelles cr\u00e9ations, comme le d\u00f4me de caviar.<\/span><\/p>\n<h3>Les plats r\u00e9alis\u00e9s en exclusivit\u00e9s pour Caviar de Neuvic<\/h3>\n<p><b>Dashi <a
