Mon parcours m\u2019a fait passer de la cuisine \u00e0 la gastronomie, en apprenant aupr\u00e8s de chefs comme Rostand, Blanc, Gagnaire et puis\u00a0Senderens qui m\u2019a form\u00e9 aux accords Mets&amp;Vin.<br \/>\nPuis je rejoins la famille Perrin au ch\u00e2teau de Beaucastel \u00e0 Chateauneuf-du-Pape aupr\u00e8s de qui j\u2019apprends le Vin.<br \/>\nIl y a 6 ans, je reprends l\u2019Oustalet toujours avec la famille Perrin, en me consacrant \u00e0 l\u2019accord Mets&amp;Vin, cette conviction \u00e9tait d\u00e9j\u00e0 en moi.<\/p>\n<h3 style=\"text-align: justify;\"><strong>Qu\u2019est-ce qui a inspir\u00e9 le nom de votre \u00e9tablissement\u00a0?<\/strong><\/h3>\n<p style=\"text-align: justify;\">L\u2019Oustalet\u00a0? Cette enseigne existe depuis 40 ans sur la place du joli village de Gigondas et signifie en proven\u00e7al \u00ab\u00a0La petite Auberge\u00a0\u00bb. En fait, ce lieu est plus qu\u2019une auberge, c\u2019est une maison en pierre de taille du XVIII\u00e8me. Un lieu d\u00e9complex\u00e9 o\u00f9 nous portons toute l\u2019attention d\u2019une grande Maison.<\/p>\n<h3 style=\"text-align: justify;\"><strong>Quelle est votre d\u00e9finition de la gourmandise\u00a0?<\/strong><\/h3>\n<p style=\"text-align: justify;\">La Gourmandise, c\u2019est\u00a0l\u2019envie d\u2019y go\u00fbter\u00a0! C\u2019est l\u2019envie par l\u2019odeur, par la vue, \u00ab\u00a0l\u2019envie de go\u00fbter et d\u2019y re-go\u00fbter\u00a0!\u00a0\u00bb<\/p>\n<h3 style=\"text-align: justify;\"><strong>Comment caract\u00e9risez-vous votre cuisine\u00a0?<\/strong><\/h3>\n<p style=\"text-align: justify;\">C\u2019est une cuisine d\u2019inspiration m\u00e9diterran\u00e9enne, nous sommes en Provence\u00a0! C\u2019est une cuisine qui essaie d\u2019aller \u00e0 l\u2019essentiel, de laisser s\u2019exprimer le produit avec une recherche autour de la cuisson et puis des \u00e9l\u00e9ments qui vont le valoriser.<br \/>\nPuis une cuisine d\u00e9pouill\u00e9e pour travailler le produit dans son expression la plus juste.<br \/>\nLa recherche d\u2019un plat commence aussi\u00a0par la d\u00e9gustation d\u2019un vin qui va cr\u00e9er le plat.<br \/>\nJe n\u2019en suis que l\u2019interpr\u00e8te.<\/p>\n<h3 style=\"text-align: justify;\"><strong>Parlez-nous de la premi\u00e8re fois o\u00f9 vous avez go\u00fbt\u00e9 du caviar fran\u00e7ais.<\/strong><\/h3>\n<p style=\"text-align: justify;\">La premi\u00e8re fois o\u00f9 j\u2019ai gout\u00e9 du Caviar, c\u2019\u00e9tait chez Pic -le p\u00e8re- \u00a0\u00e0 Valence car ma Famille originaire d\u2019Avignon, nous emmenait d\u00e9guster le fameux \u00ab\u00a0Loup au Caviar\u00a0\u00bb une fois tous les 2 ans. Ma grand-m\u00e8re qui \u00e9tait gastronome faisait la cagnotte pour nous r\u00e9galer tous en famille. Alors, pour moi, c\u2019est un souvenir grav\u00e9 \u00e0 tout jamais dans ma m\u00e9moire car cela\u00a0rev\u00eat un caract\u00e8re sacr\u00e9.
