En effet, c&rsquo;est un mode de pr\u00e9paration autrefois fort populaire, mais devenu rare aujourd&rsquo;hui. Issu d\u2019un processus de fabrication long et m\u00e9ticuleux, il est \u00e9labor\u00e9 \u00e0 partir de nos caviars affin\u00e9s puis press\u00e9s jusqu\u2019\u00e0 l\u2019obtention d\u2019une p\u00e2te onctueuse qui concentre tous les ar\u00f4mes du caviar. \u200bSon go\u00fbt est plus puissant que le caviar traditionnel.\u200b<\/p>\n<h3 dir=\"ltr\">D&rsquo;o\u00f9 vient le caviar press\u00e9 ?<\/h3>\n<p dir=\"ltr\">Jusqu&rsquo;\u00e0 la fin du XIXe, le caviar press\u00e9 est connu sous le nom de Payusnaya ikra ou \u00ab\u00a0caviar solide\u00a0\u00bb. Il est pr\u00e9par\u00e9 comme forme de caviar principalement lorsqu&rsquo;il doit \u00eatre transport\u00e9 sur de longues distances. Il se pr\u00e9sente alors sous l&rsquo;aspect d&rsquo;un pain rond et noir. Celui-ci est semblable \u00e0 une \u00ab\u00a0galette \u00e9paisse d&rsquo;un doigt et large comme la paume de la main\u00a0\u00bb. Il \u00e9voque presque un fromage dense. En Europe, il est utilis\u00e9 comme condiment, tandis qu&rsquo;en Russie, il est souvent tartin\u00e9 comme du beurre, principalement pendant les p\u00e9riodes de car\u00eame.<\/p>\n<h3 dir=\"ltr\">LA RECETTE LA PLUS CLASSIQUE DU CAVIAR PRESSE<\/h3>\n<ol>\n<li>On plonge les \u0153ufs dans de l&rsquo;eau sal\u00e9e (saumure) et on les remue pendant plusieurs minutes ou dizaines de minutes, selon les recettes et la temp\u00e9rature de l&rsquo;eau, g\u00e9n\u00e9ralement chaude. Cette \u00e9tape a pour effet de \u00ab\u00a0cuire\u00a0\u00bb partiellement les \u0153ufs dans le sel.<\/li>\n<li>Ensuite, on \u00e9goutte les \u0153ufs et on les place dans des sacs de tissu ou de nattes v\u00e9g\u00e9tales, qu&rsquo;on met sous une presse. L&rsquo;exc\u00e9dent de saumure s&rsquo;\u00e9chappe, et on obtient ainsi une masse compacte et solide.<\/li>\n<li>On conditionne alors ce caviar press\u00e9. Au XIXe si\u00e8cle, on pla\u00e7ait le caviar press\u00e9 de qualit\u00e9 \u00ab\u00a0standard\u00a0\u00bb dans des barils garnis de toile de serviette, qu&rsquo;on foulait au pied lors du remplissage (c&rsquo;est le caviar \u00e0 serviette).
