Ensuite, j\u2019ai voulu prendre une direction vers les restaurants \u00e9toil\u00e9s pour mettre en application ce que j\u2019avais appris \u00e0 l\u2019\u00e9cole. Depuis je n\u2019ai pas quitt\u00e9 les restaurants \u00e9toil\u00e9s. Je suis all\u00e9 travailler chez St\u00e9phane Gaborieau, Jacky Ribault, que des chefs patrons qui avaient le sens de la cuisine conviviale et c\u2019est la ligne directive que je prends aujourd&rsquo;hui.\u00a0<\/span><\/p>\n<h3 style=\"text-align: justify;\"><strong>Qu\u2019est-ce qui a inspir\u00e9 le nom de votre \u00e9tablissement ?\u00a0<\/strong><\/h3>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Le Restaurant Les Singuliers, ce n\u2019est pas seulement un nom de chef ou un lieu, c\u2019est tout l\u2019\u00e9cosyst\u00e8me que l\u2019on peut retrouver autour de l\u2019\u00e9tablissement. Cela prend en compte les producteurs locaux, les vignerons, les artisans.. Toute personne qui a travaill\u00e9 sur le projet de pr\u00e8s ou de loin est une personne singuli\u00e8re. L\u2019id\u00e9e \u00e9tait vraiment d\u2019axer ce nom sur quelque chose qui nous ressemble, d\u2019unique et d\u2019atypique.\u00a0<\/span><\/p>\n<h3 style=\"text-align: justify;\"><strong>Comment caract\u00e9risez-vous votre cuisine ?\u00a0<\/strong><\/h3>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Je la caract\u00e9rise de cuisine moderne qui \u00e9volue dans l\u2019air du temps, acc\u00e8s sur les v\u00e9g\u00e9taux.\u00a0<\/span><\/p>\n<h3 style=\"text-align: justify;\"><strong>Parlez-nous de la premi\u00e8re fois o\u00f9 vous avez d\u00e9gust\u00e9 du caviar.\u00a0<\/strong><\/h3>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">J\u2019avais 12 ans, c\u2019\u00e9tait chez mes grands-parents \u00e0 No\u00ebl. La tradition \u00e9tait qu\u2019ils commandaient un petit coffret de foie gras, caviar.. Forc\u00e9ment au d\u00e9but c\u2019est tr\u00e8s iod\u00e9 et salin donc on ne l\u2019appr\u00e9cie pas du premier coup. Puis, plus on go\u00fbte, plus on \u00e9volue, plus on apprend et donc on appr\u00e9cie son go\u00fbt davantage.\u00a0<\/span><\/p>\n<h3 style=\"text-align: justify;\"><strong>Comment avez-vous d\u00e9couvert le Caviar de Neuvic ?<\/strong><\/h3>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">J\u2019ai d\u00e9couvert le <a href=\"https:\/\/caviar-de-neuvic.com\/fr\/\" target=\"_blank\" rel=\"noopener\">Caviar de Neuvic<\/a> avec l\u2019ancien chef avec qui je travaillais Jacky Ribault.\u00a0<\/span><\/p>\n<h3 style=\"text-align: justify;\"><strong>Avez-vous d\u00e9j\u00e0 go\u00fbt\u00e9 du caviar Beluga ou Osci\u00e8tre ? Quelles sensations ? Une pr\u00e9f\u00e9rence particuli\u00e8re ?<\/strong><\/h3>\n<p style=\"text-align: justify;\"><span style=\"font-weight: 400;\">Ma pr\u00e9f\u00e9rence se tourne sur l&rsquo;<a href=\"https:\/\/caviar-de-neuvic.com\/fr\/15-caviar-oscietre\" target=\"_blank\" rel=\"noopener\">Osci\u00e8tre<\/a> ! La texture des grains, la petite note noisette l\u00e9g\u00e8rement iod\u00e9e\u2026 En comparaison avec le <a href=\"https:\/\/caviar-de-neuvic.com\/fr\/17-caviar-beluga-selection\" target=\"_blank\" rel=\"noopener\">B\u00e9luga<\/a>, je trouve qu&rsquo;il est plus iod\u00e9 et plus gras ce qui peut \u00eatre plus difficile \u00e0 d\u00e9guster.
