Les copeaux sont obtenus en taillant les longes de bonite s\u00e9ch\u00e9e (arabushi) \u00e0 l\u2019aide d\u2019un rabot en bois, cr\u00e9ant ainsi de fines lamelles. Ces flocons sont essentiels pour \u00e9laborer le dashi, le bouillon traditionnel japonais. Ils peuvent aussi \u00eatre ajout\u00e9s lors du dressage, o\u00f9 ils \u00ab\u00a0dansent\u00a0\u00bb au contact de la chaleur du plat, ajoutant une touche visuelle et aromatique unique. Pour r\u00e9aliser 2,5L de bouillon, comme le dashi ou la soupe miso, 100g de katsuobushi suffisent.
