Fascin\u00e9 par l\u2019\u00e9quilibre, la pr\u00e9cision et la cr\u00e9ativit\u00e9 de cette cuisine, il commence sa formation au <strong data-start=\"421\" data-end=\"439\">Grand Comptoir<\/strong>, un restaurant tokyo\u00efte enti\u00e8rement d\u00e9di\u00e9 \u00e0 la gastronomie fran\u00e7aise. Durant cinq ann\u00e9es, il y apprend la rigueur et la minutie de la haute cuisine, tout en s\u2019impr\u00e9gnant des saveurs et techniques qui fa\u00e7onneront son style. Inspir\u00e9 par un professeur de son lyc\u00e9e, premier Japonais \u00e0 d\u00e9crocher une \u00e9toile Michelin en France, Masashi nourrit le r\u00eave de poursuivre sa carri\u00e8re dans l\u2019Hexagone.<\/p>\n<p style=\"text-align: justify;\" data-start=\"833\" data-end=\"1543\">En 2000, il franchit le pas et rejoint plusieurs maisons fran\u00e7aises embl\u00e9matiques. Il travaille d\u2019abord chez <strong data-start=\"942\" data-end=\"957\">Jamin Corno<\/strong>, \u00e0 l\u2019Ermitage, o\u00f9 il affine ses techniques et d\u00e9couvre l\u2019exigence du m\u00e9tier \u00e0 travers les plats gastronomiques. Puis il poursuit son parcours \u00e0 la <strong data-start=\"1105\" data-end=\"1119\">Maison Pic<\/strong> \u00e0 Valence, o\u00f9 il c\u00f4toie des chefs passionn\u00e9s et perfectionne son approche de la gastronomie de saison. Son apprentissage le conduit \u00e9galement \u00e0 <strong data-start=\"1264\" data-end=\"1281\">Michel Sarran<\/strong> \u00e0 Toulouse, exp\u00e9rience qui lui permet de conjuguer tradition et innovation et d\u2019\u00e9largir sa palette de saveurs. Ces ann\u00e9es en France nourrissent son style singulier, o\u00f9 ses racines japonaises dialoguent avec les influences fran\u00e7aises, italiennes et espagnoles.<\/p>\n<h3 style=\"text-align: justify;\" data-start=\"648\" data-end=\"932\">Un restaurant qui en cache un autre<\/h3>\n<p style=\"text-align: justify;\" data-start=\"1545\" data-end=\"2187\">En 2005, anim\u00e9 par l\u2019envie de cr\u00e9er un lieu \u00e0 son image, Masashi Ijichi ouvre <strong data-start=\"1623\" data-end=\"1638\">La Cachette<\/strong> \u00e0 Valence. Install\u00e9 dans une maison discr\u00e8te, l\u00e9g\u00e8rement en retrait du centre-ville, le restaurant refl\u00e8te sa vision : une gastronomie centr\u00e9e sur le produit, o\u00f9 la pr\u00e9cision japonaise se marie aux techniques fran\u00e7aises et aux inspirations m\u00e9diterran\u00e9ennes. La cuisine \u00e9volue avec les saisons, valorisant les l\u00e9gumes et poissons locaux, tout en int\u00e9grant subtilement \u00e9pices et touches japonaises. Cette approche lui vaut, en 2009, l\u2019attribution d\u2019une \u00e9toile Michelin. Une reconnaissance qui consacre les efforts et la passion de toute son \u00e9quipe.<\/p>\n<p style=\"text-align: justify;\" data-start=\"2189\" data-end=\"2671\">Toujours en qu\u00eate de partage et de convivialit\u00e9, Masashi inaugure en 2020 un second lieu, <strong data-start=\"2279\" data-end=\"2299\">Le Bac \u00e0 Traille<\/strong>, bistrot voisin de La Cachette. Plus accessible et chaleureux, il permet d\u2019explorer une cuisine plus simple mais cr\u00e9ative, tout en conservant l\u2019exigence du produit et le raffinement qui caract\u00e9rise ses assiettes. Cette dualit\u00e9 gastronomie raffin\u00e9e d\u2019un c\u00f4t\u00e9, bistronomie de l\u2019autre illustre sa capacit\u00e9 \u00e0 s\u2019adapter tout en restant fid\u00e8le \u00e0 sa philosophie culinaire.<\/p>\n<h3 style=\"text-align: justify;\" data-start=\"1404\" data-end=\"1669\">L&rsquo;audace du chef<\/h3>\n<p style=\"text-align: justify;\" data-start=\"2673\" data-end=\"3200\">Aujourd\u2019hui, entour\u00e9 de ses brigades, Masashi Ijichi ne cesse de transmettre sa passion, sa rigueur et son sens des responsabilit\u00e9s aux jeunes g\u00e9n\u00e9rations. Pour lui, la cuisine n\u2019est pas seulement un m\u00e9tier, mais un engagement : chaque plat doit surprendre, respecter le produit et sublimer la saisonnalit\u00e9.
