Anecdotique au XX\u00e8me si\u00e8cle, cette production fait d\u00e9sormais partie des r\u00e9f\u00e9rences mondiales !<\/p>\n<h3><strong>La France et le caviar sauvage<\/strong><\/h3>\n<p>Au d\u00e9but du 20<sup>\u00e8me<\/sup> si\u00e8cle, l\u2019estuaire de la Gironde est l\u2019un des derniers endroits d\u2019Europe occidentale peupl\u00e9s par l\u2019esturgeon europ\u00e9en (Acipenser Sturio). Il se p\u00eache couramment entre mars et mai. La\u00a0\u00ab\u00a0mouv\u00e9e de la Saint-Jean\u00a0\u00bbla redescente en masse des esturgeons juv\u00e9niles vers l\u2019oc\u00e9an au mois de juin. Le \u00ab\u00a0cr\u00e9ac\u00a0\u00bb (ou \u00ab\u00a0cr\u00e9a\u00a0\u00bb), fait alors le bonheur des p\u00eacheurs des villages. Bordant l\u2019estuaire, Ils les\u00a0capturent parfois dans leurs filets de chanvre de v\u00e9ritables monstres, comme cet esturgeon de 5 m\u00e8tres et 500 kilos p\u00each\u00e9 en 1925.<\/p>\n<p>D\u00e8s la fin du 19<sup>\u00e8me<\/sup> si\u00e8cle, quelques achats \u00e9pisodiques de caviar figurent au registre de la Gironde. Notamment par les marchands sp\u00e9cialis\u00e9s de Hambourg. Mais c\u2019est dans les ann\u00e9es 20 (<a href=\"https:\/\/caviar-de-neuvic.com\/nl_be\/parlons-caviar\/universducaviar\/des-annees-folles-negociants-caviar\/\">D\u00e8s ann\u00e9es folles \u00e0 l&rsquo;arriv\u00e9e du caviar en France<\/a>) que le caviar fran\u00e7ais est produit en quantit\u00e9 importante. L\u2019activit\u00e9 se concentre surtout sur la rive droite de l\u2019estuaire, notamment \u00e0 Saint Seurin d\u2019Uzet pr\u00e8s de Royan, et fourni de grandes tables. Par exemple celle d\u2019Emile Prunier. L\u2019un des premiers restaurants parisiens qui, dans l\u2019entre-deux guerres s\u2019int\u00e9resse au caviar pour satisfaire sa client\u00e8le russe. Pendant la seconde guerre mondiale, la Gironde devient pour quelques mois la source exclusive d\u2019approvisionnement pour le premier n\u00e9gociant fran\u00e7ais de l\u2019\u00e9poque, Caviar Volga.<\/p>\n<p>Selon la l\u00e9gende, vers 1917, <a href=\"https:\/\/caviar-de-neuvic.com\/nl_be\/parlons-caviar\/universducaviar\/la-princesse-russe\/\">une princesse russe<\/a> passe\u00a0pr\u00e8s de Royan, cach\u00e9e sous une ombrelle. Elle fut scandalis\u00e9e de voir un p\u00eacheur se d\u00e9barrasser des pr\u00e9cieux oeufs. Elle lui confia une recette de caviar, que le p\u00eacheur mis aussit\u00f4t en pratique.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-full wp-image-4822\" src=\"https:\/\/caviar-de-neuvic.com\/parlons-caviar-old\/wp-content\/uploads\/2018\/10\/france-caviar-m.jpg\" alt=\"\" width=\"800\" height=\"350\" \/><\/p>\n<p>C\u2019est Alexander Scott, officier russe \u00e9migr\u00e9 mandat\u00e9 par la maison Prunier, qui organise ce qui va devenir une mini-industrie du caviar. La Gironde produit d\u2019une vingtaine de tonnes par an jusque dans les ann\u00e9es 50(&#8230;) Le fameux p\u00eacheur et pr\u00e9parateur Pierre Magot fournit m\u00eame directement le pr\u00e9sident Vincent Oriol. Mais aussi le Baron de Rothschild, et le journal L\u2019Equipe. D\u2019apr\u00e8s les t\u00e9moignages de l\u2019\u00e9poque, ce caviar fran\u00e7ais et d\u2019une grande qualit\u00e9 gastronomique \u2013 sans doute par sa fra\u00eecheur. Son prix est d\u2019ailleurs presque \u00e9gal \u00e0 celui du caviar russe.<\/p>\n<h3>La France et le caviar d&rsquo;\u00e9levage<\/h3>\n<p>Mais la p\u00eache intensive de l&rsquo;esturgeon, conjugu\u00e9e \u00e0 la destruction des fray\u00e8res\u00a0par l&rsquo;extraction inconsid\u00e9r\u00e9e de sable, \u00e9puise bient\u00f4t les ressources naturelles.\u00a0Aucun caviar n&rsquo;est plus produit en France d\u00e8s les ann\u00e9es 1960 \u2014 avant que la p\u00eache \u00e0 l&rsquo;esturgeon ne soit interdite en 1982.<\/p>\n<p>D\u00e8s 1936, Scott avait pr\u00e9conis\u00e9 le repeuplement arti\ufb01ciel de l&rsquo;estuaire en\u00a0Acipenser sturio. Il faut cependant attendre plus de quarante ans pour que ses\u00a0conseils soient en\ufb01n suivis et que 1e CEMAGREF se lance dans l\u2019apprentissage\u00a0de la reproduction, puis de l&rsquo;\u00e9levage de l\u2019esturgeon. Devant la raret\u00e9 du sturio,\u00a0les premi\u00e8res ann\u00e9es d&rsquo;apprentissage sont toutefois consacr\u00e9es \u00e0 l\u2019esturgeon\u00a0sib\u00e9rien, Acipenser baerii, moins rebelle et pour lequel des g\u00e9niteurs sont\u00a0disponibles en URSS.<\/p>\n<p>Ce savoir-faire est ensuite transmis \u00e0 une poign\u00e9e de pisciculteurs fran\u00e7ais\u00a0priv\u00e9s du Sud-Ouest, le plus souvent sp\u00e9cialis\u00e9s dans la truite. Ils deviennent les\u00a0pionniers de l&rsquo;\u00e9levage d&rsquo;Acipenser baerii, aujourd&rsquo;hui sp\u00e9cialit\u00e9 fran\u00e7aise. L\u2019\u00e9levage des\u00a0autres esp\u00e8ces d&rsquo;esturgeons n&rsquo;ayant \u00e9t\u00e9 autoris\u00e9 que fort r\u00e9cemment en France.<\/p>\n<h3>Le succ\u00e8s du caviar d&rsquo;Aquitaine<\/h3>\n<p>Dans les premiers temps, la qualit\u00e9 du caviar fran\u00e7ais laisse \u00e0 d\u00e9sirer, car les\u00a0\u00e9leveurs producteurs n&rsquo;ont pas encore perc\u00e9 tous les secrets de l\u2019aquaculture.\u00a0Cela explique d&rsquo;ailleurs la r\u00e9serve initiale des n\u00e9gociants traditionnels, comme<br \/>\nPetrossian. Mais \u00e0 force de travail et de sacri\ufb01ces \ufb01nanciers, les producteurs fran\u00e7ais sont les premiers \u00e0 relever tous les d\u00e9\ufb01s de l\u2019aquaculture pour produire\u00a0le d\u00e9sormais c\u00e9l\u00e8bre \u00ab <a href=\"https:\/\/caviar-de-neuvic.com\/nl_be\/30-les-caviars-de-notre-ferme\/\">Caviar d\u2019Aquitaine<\/a> \u00bb.<\/p>\n<p>Aujourd&rsquo;hui. c&rsquo;est encore la France qui concentre le plus grand nombre d\u2019exploitations sp\u00e9cialis\u00e9es ind\u00e9pendantes. Elle conserve une place importante\u00a0puisqu&rsquo;elle \ufb01gure dans le trio de t\u00eate des pays producteurs. Le label \u00ab Made in\u00a0France \u00bb reste un gage de qualit\u00e9, \u00e0 tel point que certains distributeurs \u00e9trangers\u00a0vendent un \u00ab caviar fran\u00e7ais \u00bb venant d\u2019autres pays d\u2019Europe. La plupart des\u00a0producteurs historiques souhaitent d&rsquo;ailleurs que soit cr\u00e9\u00e9e une appellation\u00a0\u00a0\u00ab Caviar d&rsquo;Aquitaine \u00bb. Le cahier des charges est en cours de \ufb01nalisation.<\/p>\n<p>Le projet de sauvetage d\u2019Acipenser sturio, d\u00e9but\u00e9 en 1975, est toujours en cours. Un plan de restauration europ\u00e9en a \u00e9t\u00e9 arr\u00eat\u00e9 en 2007, sous l&rsquo;\u00e9gide de la convention de Berne, avec plusieurs l\u00e2chers d&rsquo;alevins, en France, aux Pays-Bas et en Allemagne.
