Our eel fillets are smoked with beech wood. First, the eels are salted by hand before being smoked whole over oak for several hours.

This long and meticulous process preserves and develops all the subtle taste qualities of the smoked eel.

Recognized and appreciated by chefs for its subtlety and delicacy, smoked eel is a very fine fish on the palate. Light and tender, it can be served as an aperitif on a slice of toast with a squeeze of lemon. It is often used in dishes combining land and sea.
