The Acipenser Baerii sturgeon is historically native to Siberia.

It is today one of the most widespread species in sturgeon farming in France.

The Acipenser Baerii sturgeon can reach up to 3 meters in its natural habitat.

In our farms, its size varies between 0.5 and 1 meter.

The weight of this sturgeon rarely exceeds 10 kilos.

You have to wait at least 7 years for the female to produce her first eggs.
