Sevruga Caviar comes from Acipenser Stellatus

Acipenser Stellatus is an anadromous fish that historically originates from the Caspian Sea, the Sea of Azov and the Black Sea. It is the easiest sturgeon to identify thanks to its very elongated shape, its long narrow nose and its star-shaped dorsal plates to which it owes its scientific name of starry sturgeon.

Despite its finer and more slender silhouette than that of other species, in the wild it can reach 2 meters in length.
