This book traces the history of caviar, a once little-known product intended for modest uses, which gradually occupied a place of choice on the most prestigious tables in the world. Through this story, the reader is invited to discover the origins of this legendary product, its transition from wild caviar to farmed caviar, and the adventure of creating Caviar de Neuvic in 2011.

The book also highlights the commitment of Maison Caviar de Neuvic, which, by combining these three values: respect, excellence and innovation, has been able to reinvent this emblematic dish while projecting it into a modern era.

In Khavyar, each chef is presented through an exclusive portrait, revealing their journey, their complicity with the House and their unique approach to caviar. These portraits will also be available in audio version in the podcast “Audace” by Caviar de Neuvic, for an even more intimate immersion in the world of chefs.
